I once had a chance to try an Iced Wine. It was from Northern part of Canada.
Basically, the grapes freeze during the winter. They crush them while they are frozen and make wine. It is the most "delicious" wine I have ever had.
Even though the wine was simply chilled in the refrigerator, I could taste the frozenness / iciness in the wine. It is very hard to describe the volumes of flavors I was experiencing at the time.
Quite often a good wine is a great wine when paired with the right food. Some food and wine pairings are quite obvious where as others are often illusive. Are you planning a dinner and want to see what wine would go best with it? Have you had a great meal that was perfectly paired with a wine? Please share it so we can all enjoy the wine pairing.
Canada is producing some very nice wines recently. It is generally split into 2 main Provinces, B.C. and Ontario (but others are coming into their own), and then again into several smaller appellations. In Ontario there is Pelee island, The Niagra peninsula, Lake Earie North Shore,and Prince Edward County In B.C. There is Vancouver island, the Okanagan Valley, the Frasier Valley, the Similkameen Valley, and The gulf Islands.
