Keep it crisp and tangy, e.g. Loire, i.e. Sancerre, Pouilly Fumé (Sauvignon Blanc) or Vouvray (Chenin Blanc sweeter). Bourgogne i.e. Chablis (minerally) and Dry Riesling perhaps. Bordeaux whites are boring but could word (crisp Sauvignon Blanc.)...
